Cold Avocado Soup (Zabars Recipe)


Avocado in Vegetable Consomme

1.5 Quarts Zabar's vegetable consommé (vegetable stock or chicken stock could be used)
2 Avocados, medium dice
2 Avocado, mashed
5 Kirby Cucumbers, quartered and thinly sliced
1 bunch Scallions, whites and greens thinly sliced
1/2 cup Sweet Gherkins, finely sliced
1 Tbsp Mild Hot Sauce
2 Tbsp Lemon Juice
Salt to taste

Prepare all ingredients and gently mix in large bowl, seasoning with the salt to taste.
